Oyster mushrooms
The mushrooms are plentiful in the Paris markets, fresh from the countryside. Although I have not cooked in Paris, it would be a delight to choose from the abundance of fresh produce.
These oyster mushrooms would be just the thing for a recipe I use at home for mushroom soup. The basic premise is to use all the mushrooms you can fit into the pan.
